I am a cereal or something quick for breakfast every day kind of mom. I grew up that way as well. I remember sometimes my mom making a big breakfast though, and it was a amazing. I do love eating a big breakfast, but there is a lot of work that goes into it. My brother in law is doing his last few rotations for PA school, and my sister in-law will be at home alone with her 4 kids for a while. She asked on facebook the other day if there was anyone that knew any great freezer meals that she could do. I don’t blame her wanting to have freezer meals when her husband is gone. Cooking is the last thing you want to do when your husband is gone, and you and kids are home alone. I was trying to rack my brain for ideas for freezer meals. I thought man, I don’t really do anything freezer like, but I would like to. I thought why couldn’t you freeze breakfast. These breakfast burritos can be a quick sit down breakfast meal or a quick warm up and go kind of breakfast. They are a great grab and go breakfast for sure. I think one reason why I don’t do a lot of freezer meals is because I think there has to be a lot of work put into them, and time. Who has the time right? Well these breakfast burritos are quick and easy. Lets get freezing!
What you will need:
1 Dz scrambled eggs
1 pound of cooked ground pork sausage ( of whatever sausage you desire)
1 red bell pepper, chopped
1/2 yellow onion, chopped
1 potato, peeled & cubed
2 Tsp olive oil
salt & pepper
Shredded cheddar cheese
15-20 flour tortillas
Glad plastic wrap
Large freezer Ziplock bag
1: You need to brown your sausage and set it aside leaving a little bit of grease in the pan.
2: You need to scramble the eggs. I like to crack all my eggs into a large bowl, add about 1/4 cup of milk to them and salt and pepper. Then whisk them with a fork. Next I add them to the hot pan.
3: Take the chopped potatoes, onions and pepper and add them to a frying pan with 2 tsp of olive oil. Saute until everything is a little browned and caramelized.
4: Once everything is cooked create a assembly line with everything to assemble your burritos. I used a pizza pan to place the plastic wrap on so it would be easier to move. Place a tortilla on the plastic wrap, then put a little of the potato hash, then 1/4 cup of eggs, 1/4 cup of sausage and top it with cheese. Then roll your tortilla up burrito style with the plastic wrap on the outside. Place them into a large ziplock bag so they store better.
The burritos can be stored up to 3- 4 months in the freezer. Microwave them for 2 minutes or until warmed. Enjoy!!
