Hello friends, welcome to Thinking Outside The Pot. Hope you all had a wonderful weekend. Thanks for stopping by. I had a wonderful weekend, and enjoyed the cooler weather, and rain. We hung out inside and enjoyed wearing long pants and shirts to keep warm.

Saturday morning my husband was on call at the Vet clinic, so the kids and I slept in. Then enjoyed these yummy pancakes. If there is one thing you should all know about me is I love pancakes. Any kind of pancake. They are one of my favorite breakfast foods.


I love these pancakes because my kids will eat them because they are sweet. I love them too because they have oats in them that the chocolate chips hide. It’s the best! Hope you enjoy!

1 1/5 c of flour- white or whole wheat

3/4 c oats

3 T brown sugar

1 t baking soda

1/2 t salt

1 t cinnamon

1 egg

2 t vanilla

1 1/4 c buttermilk

1/3 c. of semi sweet chocolate chips

Mix all the ingredients together well in a large bowl. Using a soup ladle to spoon out one ladle at a time for each pancake. Make over medium high heat. Flip when the top starts to bubble a little. Serve with syrup and a few chocolate chips on top.
