A friend of mine threw a baby shower for another friend of ours this morning. She had asked me to bring muffins, because she was serving brunch type foods. I made these chocolate chip banana muffins to take. They were a hit, and everyone was asking for the recipe. I think that they could be a great thing to take to any brunch or breakfast themed shower or party. My friends new baby boy is so sweet. I got to hold him lots, and makes me miss the newborn stage. Maybe I am ready for a new baby. I say not. They are so fun to hold, but lots of work still. I still have a my sweet baby girl who is actually going to be one in 27 days. Where did the time go??
One tip I like to add a 1/2 up to 1 cup of sour cream to muffin recipes because it helps to make them nice and moist. I hate eating a dry muffin. Hope you enjoy this recipe!
- ⅔ cups Sugar
- 1-½ cup Flour
- ½ teaspoons Baking Soda
- 1-½ teaspoon Baking Powder
- ¼ teaspoons Salt
- 1 teaspoon Cinnamon
- 3 whole Bananas
- ¼ cups Milk
- ½ cups Butter
- ½ cups Sour Cream
- 1 whole Egg
- 1 cup Semi-Sweet Chocolate Chips
Preheat oven to 375ºF.
Mix together sugar, flour, baking soda, baking powder, salt and cinnamon.
Mash bananas in a separate bowl. Add bananas, milk, butter, sour cream and egg to dry ingredients. Mix everything together. Be sure not to over-mix. Stir in chocolate chips.
Place muffin liners in muffin pan. Fill them up almost completely with batter. Bake for 20 minutes.
