Chicken & Wild Rice Soup

Some nights I just don’t know what to make for dinner. I scan through Pinterest mid-day to check and see what I can find. Sometimes I find something great and sometimes nothing sounds good at the time. With the weather cooling down in my neck of the woods it feels like soup weather. I wanted to try a soup I had never made before. I looked through my cupboards to get any inspiration. I spotted a bag of wild rice mix I bought a few weeks ago. Ding, ding ding. I remembered I bought that rice to make Wild Rice soup with. I have had Wild Rice soup before but never attempted making it myself. I came up with this great recipe for Chicken & Wild Rice Soup. It was super simple to, so enjoy!

Chicken & Wild Rice Soup

3/4 cup of uncooked Wild Rice blend

7-8 chicken tenders, broiled

1 cup of diced yellow onion

1 cup of diced carrots

1 cup of diced celery

2 T of Coconut oil

2 tsp of garlic powder

Pepper

32 oz of chicken broth

2 cups of water

2 cups of evaporated milk

 1/2 tsp of dried oregano

2 T of flour

Place your chicken tenders on a cookie sheet. Then broil them until golden brown on top. Place cooked chicken in your kitchen aid or blender to shred the chicken. Set aside.

Heat coconut oil in a large pot. Toss your chopped veggies and garlic powder in the pot as well. Cook the veggies down until tender.

Add your flour to the cooked veggies and stir. Add all your liquids, oregano, rice and pepper. Bring to a boil until your rice is cooked. Add your shredded chicken and simmer on low until ready to serve.
