Chicken Salad with BBQ Lime Dressing

Chicken Salad

There is nothing more refreshing then a great big green salad for dinner on a hot summer evening. I didn’t have to run my oven for hours and heat my house up for this meal. Which is always a plus in the summer time.

I was just thinking after making this salad how yummy it would be with fresh vegetables from the garden or farmers market. There is something to say about fresh grown vegetables and how much better they taste.


Another thing that I love about this salad is you can eat it and feel satisfied. Sometimes I eat a salad for the main dish of a meal and you are starving a couple hours later. Not this salad it is crammed with great filler uppers to keep those bellies in your house full.

Salad:

6 bacon strips, cooked and crumbled

2 large chicken breast, cooked and sliced

4 small eggs boiled, and sliced

Red Leaf and Ice burg lettuces

1 large tomato, chopped

1/2-1 cup of sliced purple cabbage

4 mini sweet peppers, sliced

Chop as much lettuce as you need. I do about half and half on each kind of lettuce. Place in a large bowl. Add chicken, bacon, eggs, tomato, cabbage and peppers all in the bowl, and toss. 

Dressing:

1/2 c. Mayo

4 T BBQ sauce

3 limes, juiced

pepper

In a small bowl mix mayo, BBQ sauce, juice from limes and pepper to taste. Whisk together until no longer lumpy. Serve over salad.
