This broccoli salad is one of my favorite salads. I got the recipe from one of my good friends from during my husband’s vet school days. She gave me the recipe after she brought it to a Sunday dinner at our house. I fell in love with this salad and just had to have the recipe. We were headed out of town for the summer to spend with family. We were going to be throwing our son’s 1st birthday party with lots of family at home. I wanted to serve the recipe at his birthday party, so I asked her for it. I am so glad that she shared it with my because it is a all time favorite of everyone that eats this salad. 2 heads of fresh broccoli
1/2 red onion
1 lb bacon
3/4 c. crasins
3/4 c pine nuts or sun flower seeds
1 cup mayo
1/2 c. sugar
3 to 4 Tablespoons of apple cider vinegar
Cook the bacon and let cool. Then crumble the bacon.
Mix together the mayo sugar and apple cider vinegar in a small bowl. You can add more sugar or vinegar to make it the way you want it to taste. I always add pepper and salt as well just for taste.
Cut up your broccoli and onions. Add the broccoli, bacon, nuts and crasins all in a large bowl and toss.
Add the sauce a little bit at a time and stir after each time. Cover just enough but not too much because you don’t want it soggy. Also Let it chill a few hours before you serve it. It taste amazing afterwards!
