Broccoli Pasta Salad

I was once again racking my brain for something to take to my in-laws for Sunday dinner. I think that it is great that we have Sunday dinner as a whole family most Sundays. It was been wonderful for my kids to be around their cousins too. How many of you do this or did when they were growing up? I remember when I was growing up we went to my grandparents on Sunday evenings. We didn’t have dinner, but we always sat around and chatted and ate popcorn. It was the best, and I have so many great memories of my grandparents because of this.

This recipe I have made it before, but with a lot more broccoli and no pasta. I decided to switch it up a bit with the pasta in it. I got my pasta from Costco. It was a pack of 6 different pasta noodles. The particular one that I used was called Organic macaroni noddles. I thought that they were great!


 

1 pkg. pasta ( you can use your favorite pasta)

1/4 red onion, finely diced

Raw broccoli, washed & chopped

1 can pitted olives, sliced ( if you wanted you could add green grapes instead of sliced olives as well)

1/2 c. dried cranberries

1/4 c. bacon bits

Dressing:
 
1/2 c. mayo
1/4 c. sugar
2 tbsp. red wine vinegar
Instructions
 
Prepare pasta according to package directions. In a large bowl combine all salad ingredients. Mix dressing together, pour over salad. Refrigerate for a few hours before serving.
