Black Bean Soup

Soup season is one of my favorite seasons of the year. Soups are just easy, healthy, filling and plain yummy. I love how most soups are throw this together and this together, heat it and ta da you got yourself dinner made. Soups are great! I especially love this black bean soup. No meat, just full of protein though. It’s kind of nice to not have meat for every meal of the week. How this soup is cheap to make as well. How much cheaper can you get with dried black beans, a can of corn , tomatoes, peppers and onions. So make this soup it wont cost you hardly anything to make it, it’s healthy and so yummy.

1 bag of dried black beans


2 cups of corn

1 whole onion

1 small jalapeno

1 whole bell pepper

2 cups of chili sauce

3 diced Roma tomatoes

1 T olive oil

1 1/2 cups of chicken stock

2 tsp of cumin

2 tsp of garlic powder

1 cup of water

You will need to plan ahead with this recipe. Remember to soak your bag of black beans over night in about 7-8 cups of water. Let them soak until you are ready to make your soup.

In a large soup pot pour the beans and water that they were soaking into the pot. Bring to boil until beans are nice and tender. ( Done).

Chop your peppers, tomatoes and onion. Saute them in a frying pan until onions are translucent.

Drain beans, and add back to soup pot. Add one cup of water, olive oil, pepper/tomato/onion mix, cumin, garlic powder, chicken stock, chili sauce and salt and pepper to pot. Bring to boil.

Serve hot with shredded cheese and sour cream on top.
