This recipe’s credit goes all to my wonderful husband. I love that he likes to cook. He is always my taster. He will come in hoover over my cooking so that he can taste it. He is a big help in producing a lot of my recipes I share with you all. This time of year everyone’s gardens are booming with veggies. I love this time of year! Every meal consists of some sort of produce from the garden. This year we didn’t plant any squash, but we have had multiple family members and friends be very generous. If you are not a huge fan of squash, or your kids aren’t. There are so many ways to cook it to make you fall in love with it. This recipe is one of them. I hope to share many more squash recipes this fall season with you all.
1/2 a cup of pre-cooked, thinly sliced sirloin beef steak
1 small yellow summer squash, thinly sliced
1 small zucchini, thinly sliced
1 small purple onion, thinly sliced
1 T olive oil
salt
pepper
1 tsp Creole seasoning
1/4 cup of balsamic vinegar
Thinly slice your steak and veggies so that they cook up quickly, and absorb the flavors more. Heat up your frying pan with 1 Tablespoon of olive oil. Add your veggies and steak to the pan and saute until the veggies are done. Sprinkle a dash of salt and pepper, and Creole seasoning. Simmer for a couple more minutes. Add your balsamic vinegar and stir. Turn the heat off and let sit for a few minutes before serving up.
