My kids go through phases of eating different things for breakfast. Especially my little boy who is almost 4. He will eat scrambled eggs for about 4 mornings in a row. So then I make them for him a 5th morning in a row, and it’s a no go. Lately he has been into pancakes and french toast. This morning I tried to make our pancakes a little healthier under all the syrup. I thought why not add steel- cut oats to a pancake? They were great with the banana and apple sauce. Here’s to getting healthier and healthier eating kiddos.
3 small eggs
1 smashed banana
2 tsp of flour
1/2 cup of steel cut oats
1/4 cup of apple sauce
1 tsp of vanilla
1/2 tsp of cinnamon
Whisk the eggs with the banana, flour and oats. Then add the apple sauce, vanilla and cinnamon. Cook on medium- high heat in a buttery pan. Flip the pancake when your start to see bubbles forming on the top. Serve with butter and your favorite syrup.
