See I told you I had lots of pasta in my pantry. You are going to love this recipe as well though. It’s a great salad to take to all the summer BBQ’s you are hoping to attend or throw yourself this summer.
My husband’s mom has Sunday dinner at her house a lot. The fun part is all of his brothers except one that lives 1 ½ away come to eat dinner. It’s so fun that have lots of cousins around for my kids to grow up with now. I am so glad that we got to move back to Wyoming.
I took this pasta salad to Sunday dinner this last Sunday, and everyone loved it. I love when I take a dish to a dinner, and it’s almost completely gone when you take your bowl home. 4 to 5 c. of bowtie pasta
1- Good Seasons Italian Dressing mix- made with balsamic vinegar
1-15.25 oz. can of corn-drained
1-15.5 oz. can of black beans-drained
2 to 3 chopped roma tomatoes
A small bunch of fresh cilantro-chopped finely
1-large avocado- chopped
Cook noodles until done. Mix dressing in separate bowl. Add all other ingredients in large bowl. Add noodles & dressing and toss.
