It’s been about a month or more that this great recipe book has been out. People like you and me are starting to understand why Michelle Fagone at CavegirlCuisine.com loves her Instant Pot so much. She has provided 175 amazing Instant Pot recipes from Trail Mix Oatmeal to Mongolian Beef in this great recipe book. Michelle is a mother or two, a food blogger & recipe developer. Her Blog Cave Girl Cuisine was named one of the Top 50 Paleo Blog of 2012. What a great accomplishment Michelle has achieved as a blogger and food lover! I love finding bloggers who really love what they are doing.
Now that I have my Instant Pot, I don’t know what I ever did it without it. It will be amazing for the hot summer days this coming summer for sure. There are so many recipes in this book that I had no idea were possible with my Instant Pot. The Instant Pot has so many great qualities to it. It is the must have kitchen gadget. It can replace your slow cooker & rice cookers. It does the job of those two gadgets in less time. We all love spending less time cooking and more time with our families.
This book has a great section on how to care for your Instant Pot as well. I needed all these instructions, so that I can keep my Instant Pot in tip top shape. I love it that much! One recipe that I tried so far from the recipe book is the “BBQ Chicken Legs” . I did use chicken tenders but it as amazing and simple. I also served the chicken over rice once I shredded it. Topping it with some of the sauce left in the Instant Pot. It was divine.

BBQ Chicken Tenders Over Rice
1 cup Chicken Broth
3 pounds chicken tenders
1/4 cup of your favorite BBQ sauce
garlic salt
Place your chicken frozen or not in your Instant Pot. Pour your broth and sprinkle garlic salt on top. Press the Poultry button on your Instant Pot and set to 15 minutes. Once the timer goes off let the pressure release naturally for 10 minutes. Then you can quick release the rest of the pressure.

You will want to shred the chicken with two forks and then pour the bbq sauce on top. Toss the chicken still in the Instant Pot in the sauce. Serve over brown or white rice. Enjoy!
