I have been wanting to have chicken salad sandwiches for a long time. We needed a quick and easy dinner the other night, so I put it on the menu. The kids and I had gone to my mom’s house for the day, and got back around 5:30. Then my husband gets home from work about 6:15, and had a meeting for church at 7. It was the quickest I had ever made this meal, that’s for sure. My family ate the sandwiches up so quick though. My kids are sometimes good eater and sometimes not. Let’s just say it was a great eating night for both of them.
I love how easy these are to whip up in no time, and everyone loves them. I hope your family enjoys them as much as mine did! Enjoy!
6-8 chicken tenders, thawed
1 cup of chopped celery
1 cup of red or green grapes, halved
1/2 cup of crasins
1/2 cup of chopped pecans
1 cup of mayonnaise
1/2 tsp of salt
1/2 tsp of pepper
First the chicken needs cooked. I broiled the chicken because it was quicker. Quick is always best for me. I sprinkled a little garlic salt on each chicken tender. Lined my cookie sheet with foil and broiled the chicken. I broiled it until is browned a little, and was no longer pink in the middle.
Then chop up all your other ingredients and toss them in a large bowl. Once your chicken is done you can chop it up as well. Toss it in with the grapes, celery, crasins and pecans. Add the mayo and stir until everything is completely covered well. Add pepper and salt as well. Serve on toasted wheat bread.
