My son’s behavioral therapist’s, grandma was recently put in the hospital this week. Her mother is also my son’s preschool teacher, so I wanted to do something to comfort them. Their grandma is home and doing better, but it’s always nice to know someone cares. This summer my husband’s grandma was killed in a terrible car accident. It was a really hard time for our family and other community members. We were overwhelmed with the love, goodies, dinners and treats that people from church and the community brought over for the whole family. Food is a great comfort when you are feeling down and having a hard time, or just having a bad week.
I was so happy to make my favorite Cheesy Broccoli and Potato soup and my new recipe for 30 minute dinner rolls for my friends. I truly enjoy doing service for others. It was a pleasure to take them dinner last night. How many of you enjoy doing this as well? It really does warm your soul and the those who you serve with a hot meal.
This roll recipe is perfect for a quick fix. I love that they only take 30 minutes. Really?? Rolls that only take 30 minutes and not over night or hours of rising?? Trust me they are the best!
1 cup + 2 T of warm water
1/3 cup olive oil
2 T yeast
1/4 cup of sugar
1/2 tsp of salt
1 egg
3 1/2 cups of flour
Preheat your oven to 400 degrees. Combine water, oil yeast and sugar. Let rest for 15 minutes. The yeast in the mixture will make the mixture expand.
Add 2 cups of flour, salt and egg to the yeast mixture. Combine then add 1/2 cup at a time of the other cup of flour while your mixer is running. The dough will be sticky, but you don’t want it too stick to where you can’t handle it. Add more flour if needed.
Spray a 9×13 pan with non-stick and form dough into rolls. Place them the pan and let rest for 10 minutes. Bake at 400 degrees for 15 minutes or until golden brown on tops.
