Dairy-Free Lemon Coconut Ice Cream

Ice cream is just one of those things that’s totally synonymous with summer, but for those that are on a dairy-free diet the options can be quite limited. There are definitely a lot more options than there used to be, but let’s face it, many of them still aren’t so hot. Either the texture, consistency, or flavor just seems off.
I’ve been playing around with recipes for quite some time, but this little gem is one of my favorites. To top it all off it can be made with as little as 4 ingredients in a matter of minutes…now that’s my kind of ice cream!
Even if you aren’t dairy-free you’ll still definitely want to give this one a whirl, it really is that good.
Dairy-Free Lemon Coconut Ice Cream
1 can full-fat Coconut Milk (13.5 oz)
2 bananas
1 tsp. vanilla extract (or fresh vanilla bean if you have it)
3-4 drops Lemon Essential Oil (therapeutic-grade) OR 3-4 tsp. lemon juice
You’ll want to refrigerate the can of coconut milk for a minimum of 24 hours. While this is chilling in the refrigerator pop the bananas in the freezer. The frozen bananas really help to thicken the ice cream.
Place all of your ingredients in a blender and blend until smooth.

Pour into your ice cream maker and follow the instructions for your particular machine. I have a Cuisinart Mix It In Soft Serve Machine and it only takes about 10 minutes to form a nice consistency.
Serve alone or with some fresh fruit of your choosing. I’ve also made this ice cream with Orange Essential Oil as well. Both options are absolutely delish!

  • Oh this sounds so good! I don’t think that I’ve ever had coconut ice cream. I’ve made homemade banana and it’s one of my favorites. I will have to try this recipe, I don’t tolerate dairy very good anymore. Sounds like I need one of those Cuisinart Mix It In Soft Serve Machine. Thanks for sharing!
